Mama Bear bought a little bit of meat last week. We smoked almost 20 pounds of pork butt over the weekend for dinner with friends, and then pulled pork sandwiches for Wild Child’s birthday celebration.

Today I made a little bacon out of the rest of it…  Of course it has to cure for a week or two before I can smoke it and really call it bacon, and the 17 pounds I started out with will be much less by the time it is cured and smoked, but I am guessing we will end up with maybe 12 pounds of a variety of bacon.  I made four different kinds; two versions of maple, one sweet molasses pepper cured and one spiced bacon.  We’ll see how they all turn out.

I have a feeling I will have to share some of this round, unlike the last bacon I made… LOL
