Happy New Year.

We had Christmas with the kids yesterday.  Our tradition is Thanksgiving you spend with us, Christmas belongs to the significant othere’s families.  One of the coolest gifts ever, I got this for Christmas from my son and daughter in law:

This morning I got up and when I was making the coffee, I noticed a jar of my pickles peeking out on the bottom shelf of the fridge.  I thought, now that’s some food porn worth capturing.

A few months ago, Mama Bear and I were watching Alton Brown’s old show Good Eats.  We watch it nightly now since they play reruns so often and the DVR tends to fill up with them since we record them to watch at our convenience… I think there are 70 episodes on there right now… LOL

He was making pickles, among other “pickled” things.  Now I love pickles, especially Bread and Butter pickles, but being diabetic I try to watch my sugar intake and most B&B pickles have sugar in them, and I love them enough that I would drink the juice when I hit the bottom of the jar… 😀

So, encouraged by Alton’s show, and doing some research on my own, I set out to find or make my own recipe for B&B pickles, that were sugar free.  I found many recipes, most of them using Splenda.  While I don’t have anything against Splenda, I’ve used it for years, I also don’t have a big bag of it hiding under the counter.  I use Stevia in my coffee these days and I found several recipes using several different forms of stevia, so I decided that was the route I was going for the sweet.

Now armed with an approximation of a recipe, and digging a couple cucumbers out of the fridge (and getting a few more from a friend because they were going out of town and didn’t want to find them as mush in the bottom of the veggie drawer when they returned 2 weeks later), I proceeded to make pickles.  Admittedly I had to tweak the recipe a couple times while in the process of making it to get what I thought was close to the flavor to what I wanted.

It is interesting, if you’ve never made pickles this might help you.  First you cover the cucumbers in salt and leave them sit for several hours to draw moisture out of the cucumbers, then you drown them in your pickle juice and let them sit.  I’m not always patient, so I started sampling them the next day, then the next, then the next, finally on the fourth day or so I got the taste I was expecting.  That first day, well let’s just say that the acid hit was powerful strong, enough I thought I must have botched the recipe and was going to have to throw out 3 pounds of cucumbers that were never going to turn into “pickles”…

Now, a week later and I have some pretty nice pickles.  I’ve been having them on every sandwich, I love it.  Please note, these are “refrigerator” pickles, they will not keep longer than several weeks and need to be refrigerated to keep them safe for consumption.
